The dressing on a salad can make or break those tender greens you just found at the Farmer’s Market. Too much and it’s too soggy, too little and it’s dry, you know the story.

Try this unique nutrition-packed dressing that we found on the menu at Catch American Seafood.

Managing Chef Sven Mede has a secret ingredient: chia seeds. Hailed as a “Super Food” these seeds add calcium, protein, fiber and more.

 

Here’s all you need:

½ cup of lemon juice
¼ cup of simple syrup
1 ½ cups of canola oil
2 tbsp. of chia seeds
1 tbsp. of Dijon
Pinch of cayenne
Salt

Start with the lemon juice in a bowl, add the simple syrup followed by the Dijon mustard. Whisk it together adding the oil slowly so the emulsion doesn’t break apart. Add a pinch of cayenne pepper, salt, and ground pepper followed by the chia seeds. Don’t add the seeds first as they will soak up the liquid quickly and change the texture.

Chef Sven tipped us off that the best way to gauge the balance of flavors in the dressing is to mix it with a few greens and taste. Also, he cautions, don’t drench your salad.
