Mother’s Day at One Pico

Making dinner reservations for Mother’s Day comes with a great deal of risk and reward. A good restaurant can be the exclamation point on a perfect day celebrating Mom. A bad restaurant choice, on the other hand… well, let’s not even go there.

To help you give Mom the celebration she deserves, we’ve come up with a plan. You rally the troops for a wonderful family feast by the beach, we’ll save you a table for One Pico’s special occasion menu on May 10th, and together we’ll put on a Mother’s Day festivity like no other.

Want to go above and beyond? We’ll even throw in one of Chef Isaac Gamboa’s special cheesecake recipes for you to surprise Mom with at home.

Here’s what we imagine it’ll look like…

Mother’s Day Menu at One Pico

It all starts with an appetizer selection that’s both fresh and flavorful. How about some heirloom tomatoes with goat cheese, olives, and marinated anchovy? Or maybe an artichoke soup or poached farm egg with chive biscuit asparagus and black truffle? Mom can also indulge in one of our meat-based appetizers, like the Atlantic Fluke sashimi or Fermin Serrano ham with grilled peach and toasted almonds.

Next up on the feast menu are our exquisite entrées, starting with a succulent Mary’s Farm chicken with Peruvian potatoes and a mouthwatering roasted Alaskan Halibut. We’re also serving a delicious lobster risotto with baby zucchini flowers, as well as a grilled filet mignon with romesco, Bloomsdale spinach, and Cipollino onion. Mom in the mood for a veggie dish? Look no further than our delightful mushroom spaghetti with peas and ricotta.

Last but not least is our savory dessert selection, highlighted by a delicious praline custard and a Valrhona chocolate tart. Mom can even continue her new found love for cheesecake—after you surprise her with our recipe below—with a slice of our delectable mascarpone classic.

Chef Isaac Gamboa’s Mascarpone Cheesecake Recipe

Ingredients

2720g (6 lbs) Philly Cream Cheese
1820g (4 lbs) Galbani Mascarpone Cheese
1200g (2lb 10oz) Sugar
12 ea Eggs
680g (1.5 lbs) Cream
4 ea Vanilla bean

Instructions

Allow cream cheese and mascarpone to warm and soften to room temperature. Do not Michrowave!!

On lowest speed, using paddle attachment, mix cream cheese until it is smooth, during this process scrape down bowl twice.

Add sugar, mix 30 seconds and scrape down.

Add vanilla, continue mixing, adding mascarpone in three stages per container.

Scrape down bowl.

Add eggs.

Add cream.

Strain through chinois.

Bake in oven, 190F For 45 minutes.
