One Pico Restaurant at Shutters has a coveted selection of caviar it is unveiling for a limited time, paired with some choice bubbly.
Chef Sven Mede has selected the California Caviar Company as one of their sources. They believe caviar should be an, ‘everyday indulgence.’ Because of this belief they protect the resources they know are rare by setting the standard for the American caviar industry. Sustainable aquaculture is the main reason why domestic caviar has risen to its current popularity. White Sturgeon and Paddlefish are two of the leading types of sturgeon in the US which are two choices offered at One Pico.
Along with the Sturgeon and the Paddlefish One Pico is also offering Organic Almas Ara Spanish Caviar. Raised on a farm in Northern Spain and fed the freshest and most expensive fish feed, Almas Ara caviar is one of the most coveted in the US.
To enjoy the full experience, it’s best to come with a friend (or two), and choose one of the following Traditional selections:
– Domestic Wild Spoonbill Paddlefish sourced from nutrient rich Mississippi and Tennessee Rivers.
– Farmed Classic California White Sturgeon from ponds of Artesian well water on an aqua farm in San Francisco.
– Organic Almas Ara Spanish Caviar farmed near Pamplona in northern Spain.
This selection is served with Chef Mede’s special blue corn blinis, sifted eggs, red onions, parsley, lemon-crème fraiche and a chilled 375ml bottle of Vranken Pommery Demoiselle Tete de Cuvee Brut.

One Pico restaurant at Shutters on the Beach is open for lunch from 11:30am – 2:30pm, dinner 6:00pm – 10pm, and Sunday brunch 11:00am – 2:30am.
