Starter
Hamachi Crudo
Yuzu Kosho, Charred Tomato Saffron Coulis, Pickled Vegetables, Daikon Sprouts
Schloss Lieser Riesling, Thomas Haag, Estate, Mosel 2013
Tasting Notes
Winemaker Thomas Haag creates a 2013 Riesling that is crisp, racy and zesty with grapefruit pith, lemon oil, apple and a slate minerality. Mr. Haag uses “wild” yeast fermentation in stainless steel which creates a beautiful tension in the wine and at the same time, brightness and levity. Schloss Lieser estate was founded in 1904 and its landmark is the castle that was built in 1875 by Baron Von Schorlemer. The vineyards sit at 80% grade on slate that falls to the Mosel River.
2nd Course
Smoked Bone Marrow
Dashi, Parmesan Cream, Radish, Scallions, Micro Cilantro, Pickled Fresno Chile
Schloss Schönborn Riesling Auslese, Erbacher Marcobrunn , Rheingau 1994
Tasting Notes
Schloss Schönborn is one of the oldest wine estates in the world, dating back to 1349. The wine is showing notes of dried apricots, golden raisins, honeyed peach skin and candied lemon peel. The Riesling grapes are picked at Auslese levels, suggesting a more dessert wine sweetness. However this vintage is alive with balanced acidity that makes it perfect with a savory course.
3rd Course
“Cook Pigs Ranch” Braised Pork Shoulder
Napa Cabbage Puree, Apple & Pear Salad, Spiced Walnuts, Natural Jus
Schäfer-Fröhlich Felseneck Riesling GG, Nahe 2010
Tasting Notes
Quartz and slate dominate this Grosses Gewachs (Grand Cru) vineyard and you can taste its presence in the wine alongside spice, smoke, mint, lemongrass and green apple, with a depth and complexity that truly shows the terroir. Tim Fröhlich was voted by Gault-Millau in 2010 as the Winemaker of the Year (and the youngest ever) and he has shaped his Rieslings into some of the top Nahe estate produced wines in a very short period of time.
Dessert
Coconut Panna Cotta
Heirloom Melons, Lime, Chile, Candied Pine Nuts, Basil
Gunderloch Beerenauslese, Messidor, Rheinhessen 2012
Tasting Notes
This Beerenauslese is a blend of Riesling, Muller-Thurgau and Gewurztraminer and shows notes of lychee, ripe white peach, honey, lemon cream, blossoms and striking lemon peel acidity and finish. Fritz Hasselbach has been in charge sine 1989 producing wines that have produced perfect scores in Wine Spectator in 1992, 1996 and 2001.
